Named for the golden iris of the great statue in the Temple Ward.
A halved quail egg, boiled precisely and nestled in a roasted red pepper cup, drizzled with saffron cream and topped with a single whole spice berry, the deep crimson pupil at the centre. The presentation is deliberate and slightly unsettling. Tariq designed it that way. He says art should make you pause before you eat it.

Oasis Melon with Desert Salt

Chilled wedges of honeydew melon from Uir's precious oasis gardens, wrapped in paper-thin cured desert lamb. Scattered with flaked white desert salt and fresh oasis mint. The contrast of cold sweet fruit against the warm salt and cured meat is the first lesson Tariq says he learned about Uir's cuisine, that opposites, held together with enough care, become something better than either alone.

Sand Truffle Fritters

Rare desert truffles sliced thin, dusted in dune pepper and ground cumin, flash-fried in clarified butter until golden and blistered at the edges. Served with a cooling oasis mint yoghurt and a wedge of preserved lemon. Tariq sources these personally from a Sparkling Sands merchant whose name he has never shared with anyone.

The Slow Khan

Tariq's defining dish. Prepared every evening without exception.
A whole camel shank braised for twelve hours in a sealed clay pot with sand spice, saffron threads, aged date wine, and a bouquet of desert sage. When the pot is cracked open at the table, the steam rises like incense. The meat falls from the bone at a touch. Served over a mound of saffron-gold rice scattered with caramelised onions and pickled dune plums. This is the dish that made Tariq's name in Uir's Upper City, and the dish he cooked the night he left it.

Ember Lamb of the Dunes

A full rack of lamb marinated overnight in desert sage, dune pepper, pomegranate molasses, and green cardamom, then roasted low and slow over open coals until the crust chars and the interior blushes pink. Served with warm flatbread for tearing and a ruby-red pomegranate and dried rose petal reduction that pools on the plate like something precious. The smell alone fills the whole dining room.

Amorin of the Red Oasis

Amorin are unique to Uir's oasis waters and carry faint magical properties.
Pan-seared fillet of Amorin fish, its silver-gold scales crisped in clarified butter, served over pearl couscous plump with toasted almonds and golden raisins. The sauce is a clear fragrant broth of oasis mint, green cardamom, preserved lemon, and citrus, light enough to let the fish breathe. Tariq once served this to the Sultan's court. He does not say what happened after.

Slow-cooked lamb, saffron rice, roasted almonds, dried apricots, and a blend of sweet Upper City spices layered inside a thin baked pastry dome. The shell arrives golden and sealed at your table. Tariq's staff pierce it with a single silver knife. The fragrant steam that escapes has made grown men go silent. Named for Uir's underground black market, a reference Tariq enjoys for reasons he won't explain.

Imported short-grain rice cooked slowly in saffron-gilded stock until silken, finished with a generous shaving of dried Sparkling Sands truffle, a fungus rarer than most gemstones, and a drizzle of aged date oil so dark it looks like liquid night. The portion is modest. The experience is not. Those who have eaten this in Uir's Upper City will tell you quietly that this version is better. Tariq will nod when they say so.

Rose & Cardamom Semolina Cake

A dense, golden semolina cake baked until the edges set and the centre stays yielding, then drenched while still hot in a rosewater and cardamom syrup that soaks through every crumb. Topped with toasted pistachios and a small sheet of genuine edible gold leaf that catches the candlelight. The cake that every grandmother in Uir's Lower City swears only she makes correctly. They are all correct. So is Tariq.

Oasis Honey Baklava

Dozens of paper-thin pastry layers filled with crushed pistachios and walnuts spiced with cinnamon and clove, baked until shattering-crisp, then drenched hot in oasis honey and rosewater. Served warm on a small copper plate, alongside a small porcelain cup of Tariq's spiced coffee, the coffee is complimentary with this order. He says the combination is not optional. He says this with a smile that strongly implies he is not joking.

Saffron Date Custard

A silken baked custard, trembling in its copper cup, perfumed deep with saffron and a whisper of rose. The top is glazed a deep amber and crowned with a mosaic of fresh Uir dates, each pressed gently into the surface before baking. Finished with a slow drizzle of warm honey and a single pinch of desert salt. The dessert Tariq was eating when he received word of his exile. He has eaten it every night since. He does not explain why.

Spiced Oasis Coffee

Strong dark-roast coffee from Uir's Great Bazaar, brewed in a traditional copper dallah and flavoured with green cardamom pods, a thread of saffron, and a pinch of sand spice for warmth. Served in an engraved brass cup on a small saucer with one date and one sugar crystal. It is the first thing offered to every guest who arrives at The Dusk Rose. Refusing it is considered impolite. Tariq will not say anything. He will simply remember.

Date Wine of the Upper City

A generous pour of aged date wine, the preferred drink of Uir's merchant princes and noble houses. Sweet, potent, and dark as polished amber, with a long finish of dried fig and caramel. The label bears the seal of a Uir merchant house that Tariq declines to name. He pours it himself for tables he considers worthy. It is worth noting that Tariq's definition of "worthy" is both exacting and somewhat personal.

The restaurant's namesake in a glass. Chilled rose petal syrup, fresh citrus, oasis mint, and sparkling mineral water, layered in a tall cut-glass vessel so the colours shift from deep red at the base to pale pink at the rim, like a desert sky in the last moments before full dark. A dried rose petal floats on the surface. Non-alcoholic. The only drink Tariq says he would serve to his mother, if she were still living.

Tariq's creation. He named it himself, without apparent irony.
Dark aged pomegranate wine, poured first and left to settle. Then spiced honey liqueur, the same used in the Upper City for ceremonial toasts, layered slowly over the back of a spoon so the two never fully mix, creating a drink with two distinct halves that never quite agree. Finished with a dusting of edible gold that disperses into slow-spinning spirals, and a single dried rose petal. It looks like it contains secrets. It tastes like power. The price includes discretion about what you discussed over it.

Every guest receives the same courtesy, the same quality, and the same absolute guarantee that their evening will be conducted with complete discretion. Tariq al-Salib gives his word on this. He does not give his word lightly, and he does not permit it to be broken, by himself, or by others.
