Unlike the underground hangi pits used for daily cooking, these umu ovens are designed for rapid, high-heat cooking of large quantities of food simultaneously. The above-ground construction allows heat to radiate more intensely and enables cooks to monitor the cooking process more easily by adjusting the stone covers. The platforms are surrounded by wide, flat working areas paved with smooth stones where food can be prepared and arranged before cooking. Carved wooden posts at the corners of each platform bear traditional designs representing abundance and community, marking these as spaces of celebration rather than mere utility.
A central staging area between the two ovens features a large preparation table constructed from driftwood planks smoothed to a fine finish. Here, feast coordinators organize the cooking schedule, as umu cooking requires precise timing to ensure all dishes reach completion simultaneously. Woven baskets line the perimeter, holding wrapped food packages ready for placement on the heated stones. A dedicated team tends the fires that heat the stones for hours before cooking begins, using specific combinations of driftwood and coconut husk that produce intense, even heat without excessive smoke.
The umu platform includes a ceremonial element absent from everyday cooking spaces. Before each major feast, a brief blessing is offered at a small carved stone near the ovens, acknowledging the ocean's bounty and the community bonds strengthened through shared meals. Fresh flower lei are sometimes draped over the corner posts during particularly significant celebrations, and the first portions cooked are traditionally offered to honored elders before the general feast begins.
At this scale, the umu ovens can cook feast portions for 60 to 80 people in a single session, with cooking times of approximately 90 minutes once the stones reach proper temperature. The ovens are typically used for weekly community gatherings, monthly festivals, and whenever the settlement wishes to honor visiting dignitaries or celebrate significant achievements. The combination of high heat and above-ground construction produces distinctive textures and flavors, with foods developing a slight char and smokiness that differs from the gentler steaming of underground hangi cooking.
