Above each pit, a simple wooden frame supports woven palm frond covers that can be quickly positioned or removed as needed during the cooking process.

The central preparation area features several large flat stones that serve as cutting and wrapping surfaces. Here, cooks prepare food for the hangi, wrapping fish, shellfish, root vegetables, and other items in fresh leaves before placing them carefully onto the heated stones. Traditional leaves like ti and banana are cultivated nearby specifically for wrapping food, as they impart subtle flavors while protecting delicate items from direct heat. Woven baskets stacked along the perimeter hold prepared ingredients awaiting their turn in the pits.

A dedicated firewood storage area sits adjacent to the complex, protected by a simple palm-thatch roof that keeps the wood dry even during high tide spray. The wood is carefully selected and seasoned, as different types burn at different temperatures and produce varying amounts of ash. Experienced pit tenders know precisely which wood combinations create the ideal cooking conditions for different foods. A water station with large ceramic vessels provides easy access for steam generation and fire management.

The entire complex is surrounded by a low border of upright wooden stakes, both marking the cooking area and providing convenient places to hang tools, baskets, and drying herbs.
