Description

The heart of the station consists of six large cleaning tables carved from single pieces of dense driftwood that have been smoothed and shaped into gently sloping surfaces. Each table stands at a comfortable working height and features carved channels that direct blood and fluids toward collection grooves at the edges, which in turn drain into bamboo pipes that carry waste directly to the tidal channel below. The tables are positioned in two rows of three, allowing multiple workers to process fish simultaneously while maintaining enough space to move comfortably between stations. At the head of each table sits a collection of razor-sharp knives, scrapers, and specialized tools, each one kept immaculately clean and regularly sharpened. The Vaitafe have learned that dull blades waste time and damage the quality of the meat, so tool maintenance is taken as seriously as the processing work itself.

Large woven baskets line one side of the station, ready to receive different parts of the processed fish. The finest fillets go into baskets lined with fresh seaweed to keep them moist and cool. Heads, bones, and frames destined for soup stock are collected separately. Organs and scraps suitable for bait fill another set of containers. Even fish scales are gathered, as they can be dried and ground into a nutrient-rich powder used to fertilize the settlement's gardens. Behind the cleaning tables, a series of elevated racks allows processed fish to be hung for air drying when preservation is needed, the constant breeze and salt air beginning the curing process immediately. During peak harvest times when the station processes hundreds of pounds of fish in a single day, these racks fill completely, creating an impressive display of the ocean's bounty.

A freshwater cistern, fed by rain collection and positioned on elevated supports, provides clean water for final rinsing of processed fish and for workers to wash their hands and tools throughout the day. Stone basins beneath taps allow for thorough cleaning without wasting precious freshwater. The cistern's elevated position creates enough pressure for water to flow readily, and its capacity of several hundred gallons ensures the station never runs short during extended processing sessions. Adjacent to the cistern, bundles of dried grasses and salt are stored for use in preservation techniques, and clay pots filled with fish oil stand ready for treating wooden surfaces to prevent rot and maintain sanitary conditions.

The area surrounding the station is kept meticulously clean through constant attention and the settlement's strict protocols. At the end of each work session, all surfaces are scrubbed with seawater, tools are cleaned and oiled, and baskets are emptied and rinsed. The wooden platforms and pathways leading to and from the station are regularly treated with a mixture that repels insects and prevents the accumulation of scales and slime. During low tide, workers venture down to the channel edge to scrub the drainage pipes and ensure waste is flowing freely. This disciplined approach to cleanliness ensures the station remains a pleasant place to work despite the nature of the tasks performed there, and maintains the high quality standards the Vaitafe demand for all food that enters their community.
